Setting Up Shop

By 2019, Ajay established a commercial operation within an 80-square-foot room in his home. Here, he meticulously grew around 15 different varieties of microgreens, including popular options like sunflower, pea shoots, and radish greens. His commitment to quality was evident: he sourced non-GMO seeds from trusted suppliers and ensured optimal growing conditions to maximize nutrient content.

The Fruits of Labor

Today, Ajay’s hard work pays off as he harvests approximately 5 kg of microgreens daily, generating impressive monthly sales of ₹2 to ₹3 lakh under his brand, Grow Greens. His products are sold to local restaurants, health food stores, and directly to consumers, who appreciate the freshness and nutritional value of his greens.

A Nutritional Powerhouse

Ajay emphasizes that microgreens are more nutritious than their fully grown counterparts, containing concentrated levels of vitamins, minerals, and antioxidants. He advocates for consuming them raw to fully reap their health benefits, encouraging a shift toward healthier eating habits among his customers.

Expanding the Vision

Ajay’s success has led to the establishment of franchises across Kerala and in major cities like Chennai and Bengaluru. This expansion not only signifies financial growth but also reflects a broader movement towards sustainable and health-conscious food production.
